I love baking. The only part I don’t love about baking are all the cookies, desserts, sweets laying around that call my name.
I love Trim Healthy Mama because I’m learning how to fuel my body with healthier options. I love trying to convert recipes to fit THM principles {sugar free, with occasional less refined sugar use, separating fats and carbs} because then all those baked goods that call my name don’t make me feel so guilty. They are good for me, full of fiber, healthy fats that promote healthy baby growth, slow burning carbs that give energy and generally sugar free. I do occasionally use coconut sugar, honey or maple syrup because the sugar alcohols that THM promotes make me sick.
One thing you will need for this recipe is a doughnut pan. I use this one by Wilton. Nothing ever sticks.
{Wait, a burning question! Do you spell doughnuts like this d-o-u-g-h-n-u-t or like this d-o-n-u-t? I have found myself spelling it a both ways the last couple of days before I finally decided on the spelling of doughnut for this post. It makes the title sound more official or something. }
This doughnut recipe is toddler and kindergartener approved. I had extra boys over yesterday {the uncles as I usually call them. Ben’s two youngest brothers are 8 and 6 and since they live right through the woods they are over quite a bit.} and they both devoured these when snack time came around.
I love the slight coffee flavor in the chocolate doughnuts. {Hence the mocha in the title} Who wouldn’t like chocolate and coffee flavored doughnuts?
The frosting is super easy to make and if you let the extra chill in fridge for a while it makes a yummy S snack on its own.
Okay. So here is the recipe for these amazing Mocha Doughnuts that can help slim your waist and fulfill your mocha dessert cravings.
Trim Healthy Mama Mocha Doughnuts
Recipe makes 8-9 doughnuts.
1 cup flaxseed meal {I use whole flaxseed like Bob’s Red Mill Golden Flaxseed and then grind it in my Vitamix to make fresh flaxseed meal}
1/2 cup cashew meal
1/3 cup cocoa powder
1/4 cup finely ground coffee
1/4 cup coconut sugar {if you handle the sugar alchohols fine then go ahead and replace the coconut sugar with the sweetener of your choice}
2 teaspoons stevia powder { I use Trader Joe’s Stevia Extract powder}
1 teaspoon baking soda
1/2 teaspoon salt
3 eggs
3 egg whites
1/2 cup water
1 Tablespoon apple cider vinegar
1. Whisk dry ingredients together in a large bowl.
2. Add all wet ingredients EXCEPT the ACV. Stir until well combined.
3. Add the ACV and stir in quickly.
4. Allow the batter to sit for 5-10 minutes.
5. Use a quarter cup to measure batter into doughnut pan.
6. Bake at 350 for 15-20 minutes. {My oven seems to cook things quicker than other ovens I’m just to lazy to check and see how much the thermometer is off so don’t be concerned if your mocha doughnuts take a little longer to bake than mine.}
I use this simple frosting recipe on the tops of my doughnuts:
Dairy Free Chocolate Frosting
1 cup coconut cream
1 cup coarsely chopped dark chocolate {I used Lindt’s 85% Dark Chocolate bar}
Optional: more stevia to sweeten to taste
Melt the coconut cream and chocolate together and if desired add more stevia to taste.
I frost the doughnuts while the frosting is warm and then keep the extra frosting in the fridge for an S snack or dessert. 😉
Store your doughnuts in the fridge.

Yeah! You would probably need to replace the coffee with more cashew meal.

Hi Linda, I would think a cupcake pan would work, maybe only fill 1/4 – 1/3 of the cup and then you will just have to watch them as they bake. I have never tried using a different pan so I can’t give you an exact answer. I hope these tur out for you though!

I’m pretty sure Almond flour will be a fine substitute for the cashew meal. I haven’t tried it in this exact recipe, but I have used them interchangeably before. Good luck!

Hey Susan, I don’t currently have a carb count, but carbs in this would be minimal. There would be some in the coconut sugar…but I don’t know the exact count. These are definitely high fat though.
