Quinoa Carrot Noodle Soup {Trim Healthy Mama-E}
I like soup. I could eat it every day. Unfortunately for me, my husband and boys don’t like it that often. They would be fine if we had it twice a month.Unfortunately for them, I make it once a week. It helps use up vegetables, is really cheap and, if you use a gelatin rich broth, it promotes gut health.
One thing I miss while on a grain free diet is pasta. I love noodles; spaghetti, chicken noodle soup, pasta salad, etc, I love them. While my newest favorite noodle replacement isn’t quite the same as a gluten free rice noodle (I don’t remember what wheat noodles taste like) it does work to satisfy my craving and also helps me get more vegetables into my diet.
Enter Carrot Noodles into my Quinoa Soup.

This soup has very simple ingredients and can be made pretty quickly.
Both boys ate this soup really well the first day, a whole bowl for each of them. The second day their “soup-is-only-good-once-a-week-itis” they inherited from their father set in and they refused it unless I spoon fed it to them. So this is half toddler approved I guess.
If you make sure to use low fat broth, or defatted homemade bone broth, this is a Trim Healthy Mama Energizing Soup.
Quinoa Carrot Noodle Soup {Trim Healthy Mama E, Grain Free}
1 green pepper, chopped
1 purple onion, chopped
4 celery stalks with leaves, chopped
5-8 garlic cloves, minced
1 Tablespoon palm oil
1/2 cup quinoa
1 1/2 quarts homemade chicken broth with the fat skimmed off
5 carrots turned into noodles *see notes
Sautee the first four ingredients in the palm oil for 8-10 minutes over medium heat. Stir in quinoa and sautee another 5 minutes. Add broth and bring to a boil. Once boiling turn to low and allow to simmer for 15 minutes. Add carrot noodles and simmer for another 5 minutes or until carrots are cooked to your desire.
Notes:
*This soup is grain free because quinoa is a seed or pseudo-cereal
*To make carrot noodles: wash carrots, (peel if not organic and discard peel) cut off the ends and then use your vegetable peeler and make “noodles” until you come to the heart of the carrot and it is too small to make any more noodles, chop that part and throw it in with the quinoa. The peelings are your noodles.

This does sound interesting. I don’t think I could ever give up pasta or noodles. I may try this soup once and see if I like it–I do happen to love carrots.

Is it bad that I’ve never had quinoa? I am about a bazillion times positive that my kiddo won’t eat it at all.

If you are going to try quinoa the easiest way to use it is as a rice substitute. Or even cook half part rice/half part quinoa with two parts water or broth. Yum!

I have used zucchini before, but I never though to use carrots. I’m going to have to try that one time. It sounds yummy.

Hi! This looks delicious. Do you cook the quinoa first? Or ok just to put it in and it will soften/cook as part of the directions above?

Hi Basia, I’m so sorry that I didn’t see your comment earlier!! You just add dry (uncooked) quinoa as instructed and it cooks as the rest of the soup does. ๐ Hope you enjoy!!
