Dairy Free PB and J Ice Cream Recently we found out that Seth should be avoiding berries while we work on getting his gut healed. This is really sad because his favorite dessert is this super easy ice cream that doesn't need any time in the freezer. {This site uses affiliate links. For the full disclosure, click here.} It has just five ingredients. It takes about five minutes to make. I even gave you five steps to make it. :-) It is a great alternative to ... continue reading...
Live Like No One Else
I love this time of year. Spring cleaning, decluttering, longer days and warmer weather. Here in West Michigan the warm weather has been slow to come. Our snow was gone about four weeks ago now and I think we have had maybe five days above fifty degrees. Don't hold me to that, I'm just really ready for seventy-five or eighty degrees. :-) Today as I am writing I am sitting outside while my boys are playing. Seth is burying a ball, "because it is windy", and Cameron, my little busy body, is ... continue reading...
We're Working On It…

I have another visit with my orthopaedic surgeon on Monday. I'm supposed to have my arm in a sling most of the time, but it has been kinda difficult to keep it on. I don't lift anything with my left arm, it is so weak right now I don't know if I could lift much anyways, I just try to move it around and stretch it out. I'm hoping that after ... continue reading...
Cilantro Lime Shrimp and White Beans
The past few weeks we have slowly been adding a couple things back into our diet after our strict elimination diet. I chose to start with rice, which is one of the easiest digested grains, and whole eggs. Thankfully, neither has seemed to cause issues for Seth so far. When I mentioned this shrimp dish earlier, I had served it with cooked buckwheat to keep it grain free. This time we didn't have any buckwheat groats in the house so I served it with rice for the boys and quinoa for ... continue reading...
