Grain Free Sugar Cookies
This past weekend we went to a couple of family Christmas parties. There were sugar cookies EVERYWHERE.ย No grain free sugar cookies though…

Seth had had fun at Grandma’s cutting out and decorating gluten free sugar cookies and he was begging to make some of our own.
I wanted to eat some too, but my body doesn’t handle sugar that well, so we came up with these pretty little cookies.
If you want them to be completely free of refined sugar, than decorating them with grain free powder sugar won’t be an option for you. The powdered sugar was this momma’s way of getting out of making frosting. When we make these again we’ll probably make a chocolate frosting (stevia sweetened) to put on them.
These grain free cut out cookies use only one flour- coconut and are sweetened with maple syrup. I couldn’t discern any maple taste to the cookies, but some of my testers did.
The grain free sugar cookies pictured have little holes in them because my oil was cold, so make sure your oil is room temperature if you would rather not have holes in your cookies.
This dough is easiest to work with when chilled so don’t skip that part to save time. ๐
Grain Free “Sugar” Cookies {Dairy Free, Grain Free, Refined Sugar Free, Nut Free}
1/2 cup softened organic, unrefined coconut oil
1/2 cup maple syrup
1/4 teaspoon stevia powder
1 teaspoon vanilla
2 eggs
1/2 teaspoon xanthan gum
2 Tablespoons flax meal
1/2 cup + 2 Tablespoons coconut flour
1/4 teaspoon baking soda
1/2 teaspoon baking powder
Cream first seven ingredients together. Slowly add coconut flour, baking soda and baking powder. Beat until well combined. Using your hands, or spatula, form dough into a ball in the bottom of your mixing bowl. Cover and refrigerate overnight or at least two hours.
After refrigeration place dough between two pieces of parchment paper and roll to desired thickness.
Work quickly to cut dough out in shapes desired. If dough becomes to warm and sticky place it back in the refrigerator or freezer to chill.
Bake at 325* for 8-10 minutes or until edges began to brown.

I’ve been wanting to try coconut flour! I cut out gluten for several months because of the carbs since I was trying to eat better. Now when I have some it hurts my stomach! So I’m trying to find more ways to avoid eating it. This is a fantastic recipe!

Definitely need to share this with my brother. He is gluten intolerant .
So many people are having issues with gluten now. Let me know if your brother tries these. ๐ If he still eats a lot of sugar he will probably not like these unfrosted, so make sure he uses a yummy frosting. We don’t eat a lot of sugary stiff here so we founs them plenty sweet, but some testers didn’t and said they definitely wanted frosting. ๐
