Dairy Free PB and J Ice Cream
Recently we found out that Seth should be avoiding berries while we work on getting his gut healed. This is really sad because his favorite dessert is this super easy ice cream that doesn’t need any time in the freezer.

It has just five ingredients.
It takes about five minutes to make.
I even gave you five steps to make it. ๐
It is a great alternative to dairy filled ice cream for those who don’t handle dairy well. No gluten, grain, sugar, nuts, eggs, or soy.
It tastes like the classic peanut butter and jelly sandwich but you don’t need peanuts, the sugar filled jelly, or the bread.

Since Seth-boy can’t have this right now, I’m enjoying it after he goes to bed.
I don’t really measure anything for this recipe, I just throw/dump/splash ingredients in until it tastes amazing. ๐
Dairy-free “PB and J” Ice Cream
*frozen strawberries
*homemade sunflower seed butter
*salt
*vanilla
*liquid stevia- I really like the Trader Joe’s brand.
1. Put about 10-15 large frozen strawberries in your food processor, add one large scoop (probably two tablespoons) sunflower seed butter, a few grains of salt, or a few shakes depending on which kind of salt you have, and a generous dash of vanilla.
2. Put the lid on your food processor and turn on. Let it process for a couple of minutes.
3. Taste to see if it needs the stevia drops or not. If it does add a few drops, start with two. Mix some more and taste again.
4. Once you have the ice cream tasting the way you want to let it sit for a few minutes. This allows it to soften and become scoopable like ice cream that is full of everything you can’t eat.
5. Place into a cute little dish and enjoy every bite of this real food goodness. ๐
If you are a chocoholic like myself you may like to throw in a tablespoon or two (or a handful) of dairy free, sugar free chocolate chips.

This looks yummy! My favorite ice cream is any form of mint chocolate (mint chocolate chip, mint chocolate shaving…anything like that!)

Yum! That is one of my husbands favorite flavors as well. I like the peppermint stick kind that is out around Christmas. Have you tried that?

Yea, this is pinned and happening as soon as our strawberries turn red instead of that icky green color. I am so excited to give this a try! I think my son would (want to) eat the whole batch in one go.

This is different. We have frozen strawberries, but I don’t have the sunflower seed butter. Wonder what else I can substitute? Thanks for sharing this on Tasty Tuesdays. Will give this a try.

You can use any nut or seed butter you have on hand. I’ve used almond, peanut and cashew with success. You will get a slightly different flavors with each one.
I used sunflower seed butter because I have really liked how that tastes lately and because lately I have been reacting to almonds. ๐
