Curried Vegetables with Fried Eggs
This curried vegetable breakfast has been my favorite the last few weeks. I’m trying to add more vegetables into my diet and incorporating them into breakfast has been much easier than I thought it would be.
This isn’t something I’ve been able to get Seth and Cameron to eat, they prefer their eggs scrambled with bacon rather than with vegetables on the side.
The spices in this Whole30 breakfast recipe both fight inflammation. Tumeric and garlic also can improve cardiovascular health and lower cancer risks. You can find more about garlic here and tumeric here.
Tumeric is a spice I have had to grow to like. I love curries, but hadn’t done much with it on it’s own before a couple of months ago. If you haven’t used tumeric alone before, I recommend starting with smaller amount of it and slowly increasing it as you cook more things with it.
Onions have quecertin in them, a natural antihistamine and anti-inflammatory that can be helpful in healing the intestinal tract.

Sauteed Vegetables with Eggs
1 small onion, sliced
2-3 carrots, use a peeler to make ribbons or noodles
2-3 garlic cloves, minced
Spinach, arugala, kale or a mixture of these greens
1-2 Tablespoons olive oil or coconut oil
1/2 teaspoon tumeric
1 teaspoon curry powder
Salt and Pepper
2-3 eggs
Saute onion, carrots, garlic and as many greens as you want- remember they cook down a lot- in the olive oil or coconut oil until cooked to your liking. Add tumeric, curry powder, salt and pepper to your taste.
Remove vegetables to a plate and fry eggs in the same pan. I like to cook them over easy so I can drain the runny yolk over the vegetables.
This recipe is Whole30, Paleo, GAPS and Candida diet legal. If you are following Trim Healthy Mama, this would be a crossover.

This sounds delicious! I never think to slice the carrots in ribbons like that! Seems like they would cook way faster-thanks for the tip! I’ll have to give this recipe a try!

They cook so much faster!! I like to just use a vegetable peeler, get rid of the peel and then “peel” the rest of the carrot into ribbons. So easy!!

Yum! We eat scrambled eggs with the veggies (usually spinach, peppers and onions) tossed in most mornings. I wonder if your kids would try them if the veggies were mixed in with the eggs? The flavors sound wonderful though. I just love turmeric!

I haven’t got them to eat veggies in eggs yet, they just don’t know what they are missing. ๐ They do eat potatoes in their scrambled eggs and sometimes I can sneak in some onion.

I think I might prefer this with all the same ingredients but as an omelet. I have never cooked with turmeric before but am willing to give it a try!

This sounds delicious. I love my eggs with all kinds of different sauteed veggies and a little salsa thrown in too. I love the whole idea of peeling the veggies into the dish. I will have to try that this weekend.

Loved it! Mr. T requested a fried egg sandwich, and then I took so,e garlic, onion, zucchini, carrots, bell pepper and spinach and sautรฉed that and fried my own egg and left it a bit runny and it was awesome! Loved it! Thanks for sharing ๐

I had not heard about tumeric and garlic helping to fight inflammation. I am going to have to start implementing these into my diet. This recipe is a great start.

That looks really tasty. I do a lot of vegetables with eggs for breakfast, too. When I was doing LCHF I would take green bell peppers and slice them up. I would cook them in just a tiny bit of bacon grease to give them a good flavor. Then I would eat them with a friend egg. Get my vegi’s in and a lot less calories/fat than bacon.
