The past few weeks we have slowly been adding a couple things back into our diet after our strict elimination diet. I chose to start with rice, which is one of the easiest digested grains, and whole eggs. Thankfully, neither has seemed to cause issues for Seth so far.
When I mentioned this shrimp dish earlier, I had served it with cooked buckwheat to keep it grain free. This time we didn’t have any buckwheat groats in the house so I served it with rice for the boys and quinoa for me.
We don’t have shrimp often, but when we do I either make this or a Thai stir-fry that my hubby loves. This recipe makes the beans and rice, or quinoa or buckwheat, seem a lot more special.

Cilantro, lime juice, red onion, olive oil, garlic, white beans and shrimp. You probably already have most of the ingredients in your pantry. Besides only needing a few ingredients this recipe is really easy and quickly made.
Cilantro Lime Shrimp and White Beans
1/2 red onion, chopped
3 cloves of garlic minced
2 T olive oil
1 lb shrimp, peeled and deveined
2 c white beans, rinsed and drained- I’ve used several different kinds so whichever you prefer
1/2 c chopped cilantro
2 T lime juice
salt
optional: cumin, red pepper flakes
Saute onion and garlic over medium heat for five minutes. Add beans and shrimp, cover and simmer until shrimp is pink. Uncover and add cilantro, lime juice and salt to taste.
Serve with rice, quinoa or buckwheat and a big salad.
Seth’s favorite part of this meal is the shrimp, he will eat the beans and rice just to get more shrimp. ๐ Cameron eats all of it, Ben likes it with red pepper flakes and I like it with cumin and red pepper flakes sprinkled on top.

I think my favorite way to eat shrimp is with cocktail sauce. It is a family tradition to have it on Christmas Eve at my Grandma’s house.
