Today we had some friends come over for a playdate. I wasn’t sure what I was going to make for a snack until I remembered all the shredded coconut I have in the pantry.ย We haven’t made these in a while, so I figured it was a good time to test the recipe again to make sure I had it right. And if it didn’t turn out, well, I don’t mind eating mistakes. ๐
Before this recipe I could never get no-bake cookies to turn out. They either never set or the turned into a crumbly mess. My sister is the no-bake cookie queen, somehow I missed that gene. Thanks mom and dad. ๐ Or maybe it was just that grain filled no bakes and I didn’t get along. I have never had these cookies not turn out. They always set but not to much. They are soft, chewy and they have chocolate. They are a win however you look at it.
If you are like me and a no-bake cookie recipe frightens you, this is the recipe for you. If you are searching for a vegan grain free cookies you are in the right place. Yep, no dairy in these chocolatey pieces of goodness.
Since we can’t use grain or dairy and we are trying to reduce refined sugar I thought it would be difficult to make a no-bake cookie. I did find a recipe on one of my favorite real food recipe collection sites Eat Nourishing, but it had butter and milk in it. So I came up with this version. Instead of oats you will use shredded coconut. To replace the sugar, raw honey-which is super good for people with allergies and helps to repopulate the gut with good bacteria. Instead of peanut butter you can use any kind of homemade nut or seed butter.ย So here is the recipe. If you make these I would love to know what you think! ๐
Grain-Free No-Bake Cookies
1/3 c coconut oil, you can use refined or evo
1/4 c raw honey
1/4 c water or nut milk
1/2 c nut/seed butter
4 T cocoa powder
1 1/2 -1 3/4 c shredded coconut
Place the first five ingredients in a medium size sauce pan and warm over low-medium heat. Whisk continuously. Once all ingredients are combined and there are no lumps, remove from heat. Stir in coconut. (Sometimes I use the bigger amount of coconut, but most of the time I use the smaller amount. I think it depends on how much oil your nut butter releases.) Once all ingredients are stirred together use a tablespoon to form cookies and place on a parchment paper lined cookie sheet. Allow to set for thirty to forty-five minutes. If you want these to set faster you can place them in the freezer.
We had a good visit with friends. We shared our cookies and they were deemed “really good.” Seth’s two-year old buddy ate two of them so I think that makes them toddler approved as well.

We love no bakes! But I don’t make them too often. We like chocolate chip cookies and a dark chocolate almond drop cookie I make. All cookies are good, right!?!?!! Yum!!!!

you had me at no bake! Of course I would love anything that has only a few ingredients easy to find and NO BAKE!! I LOVE coconut and chocolate, what a great treat and I think I can even have the kids help me make these.. I was thinking add a few jelly bean type treats in the middle and make them birds nests for Easter.. yummy!
