Grain Free Breakfast Cake
We’ve been making this grain free breakfast cake pretty often at our house. A few months ago, I was searching for a snack for the boys and noticed that we had some bananas ready to bake with or put them in the freezer for smoothies. Banana muffins sounded good to me, but I was tired of hearing that my muffins weren’t like Grandma’s, so I decided to make what I thought would be similar to her recipe, but put it in a different form.

That’s when this grain free breakfast cake recipe came into being.
This recipe also makes great grain free banana muffins!!
I’m going to share the basic recipe and then also give the variations that we have tried and had success with.
Grain Free Breakfast Cake
1 cup coconut sugar {we’ve also used Aldi’s Sweet Additions cup for cup stevia}
4 droppers of liquid stevia- the Trader Joe’s brand is my favorite!
½ cup almond milk or water
2 ripe bananas
1 cup applesauce {if you want some oil in the cake, you can sub out ¼ cup of the applesauce for melted coconut oil or avocado oil. We’ve also used ¾ cup pumpkin and ¼ cup oil in place of all the applesauce. And though we also try to stay away from dairy, we got a container of extra thick sour cream one time that my husband wasn’t a fan of, so we used sour cream in place of the applesauce and it worked great!}
½ teaspoon salt
1 ½ teaspoon cinnamon
2 teaspoons baking soda
2 teaspoons cream of tartar
1 1/3 cup quinoa flour {I make my own in my Vitamix}
1 cup almond flour
1/3 cup coconut flour
¾ cup chocolate chips
Cream the first five ingredients together. Add in all the dry ingredients except the chocolate chips and mix until combined. Stir in chocolate chips. This recipe makes two 8” round cake pans {they will be thinner cakes} or around 15 muffins. Bake at 325 until a toothpick comes out clean. It is usually around 20 minutes for me. {Sometimes it depends on how wet your batter is and which variations you are using.}
