The World’s Most Versatile Grain Free Energy Bites
“Mom! I’m hhhuuuuunnnnnnnggggggrrrrrrrryyyyyyy!!” It had been said four hundred times already that afternoon, so I decided the next snacks needed to be full of fat and fiber for little bellies and this breastfeeding momma…but we didn’t have a ton of ingredients in the house. So, we pulled out all our nuts and seeds, some dates, and a few other ingredients and put together these grain free energy bites that are super filling and very versatile. I’ll leave the basic recipe and then share some of the changes that we have made. {The fat and fiber in these energy bites make them great for pregnant mommas too!! And if you are newly postpartum, these are a quick and easy recipe to mix up, or have a helper mix up, for middle of the night munchies.}

World’s Most Versatile Grain Free Energy Bites
6 dates
6 dried, unsulfered apricots
1 cup raw cashew pieces
1 cup pepitas
2 T flax seed
1 T chia seed
2 T cocoa
1 t vanilla
3 T nut butter
Instructions:
Soak the dates and apricots in hot water for at least 5 minutes. Remove pit from dates if needed. Place all the ingredients in a food processor and mix until you can mold the mix into balls. Eat or refrigerate. I wish I could give you an estimate for how long these last…but really at our house, two days is the longest we have had them around.
Variations:
We have used 12 dates, OR 6 dates and about a cup of raisins in place of the apricots.
In place of the cashews and pepitas, we have used walnut pieces, almonds, sunflower seeds, shredded coconut and combos of any nuts or larger seeds we had on hand. You just want it to equal 2 cups.
We have also added chocolate chips for an extra treat. I love the Costco brand of dairy free chocolate chips!
We have used tahini, sunbutter, almond butter, cashew butter, coconut butter, and peanut butter. My boys actually prefer the flavor of the tahini in these grain free energy bites.

How do you get your coconut butter to not be rock hard?! I tried slowly warming it in a pan but it got super thick and immediately burned 🙄 we’re currently testing an almond allergy elimination diet-style and that’s what I’ve always used to make these kinds of snacks. Tahini and sunbutter tend to be more runny than almond in my experience. Do you have to alter your recipe or should it still firm up fine in the fridge?
