Gluten Free Trim Healthy Mama Cranberry Citrus Muffins- E Recipe

The boys and I made these delicious citrus muffins last week. I’ve been wanting to attempt a citrus flavored muffin for a while, but haven’t had much time to try it, so when we had our stay at home day last week, and mandarin oranges that needed to be used, we set out to create a citrus muffin that is Trim Healthy Mama approved.
Not only are these Trim Healthy Mama cranberry citrus muffins sugar free, they are also gluten free, dairy free, nut free, and toddler approved! They are a hearty muffin, with one muffin coming in at just under 16 grams of carbohydrates and almost 6 grams of protein. Have two for a meal, or pair a muffin with an egg white scramble. Super yummy!
Trim Healthy Mama Cranberry Citrus Muffins
1 1/2 c gluten free oatmeal {We LOVE the Trader Joe’s Brand!}
2 T coconut flour
1/4 t salt
1/8-1/4 stevia powder
1/4 c sugar free dried cranberries
3 mandarin oranges, peeled and seeded
4 egg whites {if you use 3 whole eggs, you can eat one muffin and still fall under the E guidelines}
Using a food processor {we have this one} blend oranges andeggs whites together until smooth. Add the dry ingredients except for the cranberries, and blend until smooth. Stir in cranberries. Use 1/4 cup per muffin and you should end up with 6 muffins. Bake at 350 for 20-25 minutes.
