Who doesn’t love a Christmas Cookie Exchange?
We would like to share with you some of our favorite Christmas cookies! We can’t give you the actual cookie, but we can give you the recipes! You can see one of my favorite Christmas cookie recipes below, and then find links to several other great Christmas cookie recipes at the bottom of this post. I love Almond Joy Bars, the only problem is that they contain ingredients that don’t like me, the biggest ones are corn, milk and sugar.
These little bites can be addictive, so I try to only make them when I am going somewhere. These are great for Christmas parties, Bible Study, coffee dates and where ever else you want to bring some joy.
My family loves these and this is another recipe that Ben requests that I make, so I bet your family will love it too, whether you are following a grain free diet or not. ๐
{Side note: if you are just starting a grain free lifestyle always volunteer to bring something where ever you go, that way there will always be something for you to eat. Eating a snack before you leave might be a good idea too- then you won’t eat 10 of these little bites of deliciousness, as well as packing some snackies in your purse or diaper bag.}
The main ingredients in these Almond Joy Cookie Bites are: almond meal- almond flour works just fine to but I find that almond meal is cheaper- finely shredded coconut and coconut oil.
This recipe is pretty easy to mix together but you do need a couple of hours for refrigeration or freezing. Cooling the cookie part makes it easier to shape into balls, because the oil holds together better when cooled.
Almond Joy Cookie Bites
1/2 cup coconut oil- I use extra virgin organic, the kind with the coconut taste
1/4 cup raw honey
1/4 teaspoon celctic salt
1 1/2 cups almond meal
1 cup finely shredded coconut
4 Tablespoons flax meal
1/8 teaspoon stevia powder
1 cup dairy free chocolate chips
1-2 Tablspoons coconut oil
In a small saucepan melt the coconut oil, raw honey and salt and stir until well combined. While the oil is melting stir together the almond meal, shredded coconut, flax meal and stevia powder in a mixing bowl. Combine the liquid ingredients with the dry ingredients and stir. Once dry mixture is wet, place in the refrigerator for at least one hour.
When dough is cooled and holds together well make small balls by rolling it in your hands. {I got twenty-ish, the ish is because I was eating as I was rolling, so it may make more. :-)}
Using a double boiler melt dairy free chocolate chips and a tablespoon or two of coconut oil. Dunk each almond joy cookie ball into the chocolate once and allow to cool. After the first chocolate is hardened on the cookie bite I like to dunk them again, more chocolate is always a good thing.

It looks delicious. I wish I had more chances to make goodies. Usually I have to pick between blogging or chores during my baby’s nap times though (and she’s not a big fan of me cooking instead of playing with her).
