Everyone everywhere seems to want pumpkin flavored everything when fall comes around. And I’m no different. 🙂
There is no Starbucks near where I live, and none of the coffee shops in my area have pumpkin spice syrup or coffee, so I had to come up with my own version of this taste of autumn.
One blog that I love, The Spunky Coconut, has a recipe for a dairy-free Pumpkin Spice Latte that I wanted to make, but I didn’t have everything for it, but I did have the ingredients for bulletproof coffee.
I love bulletproof coffee. For nursing momma’s who don’t really need to worry about calories bulletproof coffee can be a good satisfying snack. For others it can be a good quick breakfast if you are in a rush. If I have this for breakfast I don’t need to worry about getting a snack in the middle of the morning, I don’t even get the munchies. Which is why I think this will work great on Thanksgiving morning. It has the flavors of Thanksgiving but it will also help me stay out of the food until it is actually time to eat.
Dairy-free Bulletproof Pumpkin Spice Latte
1 cup coffee
1 cup almond milk- if you use unsweetened you will need to adjust the amount of honey you put in.
1/4-1/2 teaspoon pumpkin pie spice
1-2 tablespoons raw honey
2 Tablespoons coconut oil
2 Tablespoons mashed pumpkin or butternut squash
1. Put the mashed pumpkin into a blender.
2. Place the first five ingredients in a small sauce pan. Bring to a boil over medium-high heat.
3. Pour the hot coffee and almond milk over pumpkin.
4. Blend on high for 1 minute, or until coffee gets as much froth as you want.
5. Pour into a large mug and enjoy. 🙂

I really need to check out the coconut oil. I don’t like coconut taste or texture in my mouth and is high in cholesterol. But I understand the oil is different. This sounds so good.

Oh wow! This sounds delicious…I have yet to ever blend my bulletproof coffee & I still eat an apple sandwich with it as with my intense workouts just coffee…even high in fat…doesn’t cut it for me lol but this one sounds amazing!

I usually have it as breakfast with something else, a couple of eggs or a pancake or something, since I’m nursing and in the summer when I workout more (I really don’t like working out inside), so I can see adding to need something to it.
How do you make your apple sandwich? It sounds yummy.

I’m not a big pumpkin coffee person, but I love anything with pumpkin pie spices. I sprinkle nutmeg over my whipped cream on pumpkin pie. I even make a white chocolate nutmeg bark for the holidays. It tastes like egg nog.

Oh, that chocolate bark sounds delicious! If you don’t care for the pumpkin in your coffee you could always leave it out, it would be a little thinner, but still have the yummy taste.
