Valentine’s Day. Immediately you think of what candy?CHOCOLATE.
What kind of fruit do you like with chocolate?
Bananas? Raspberries? This recipe has both for you.
It is mostly fruit sweetened, with just the smallest amount of raw honey.
It is full of protein and amino acids to help little toddler and baby bodies grow and adult bodies stay strong. It also has lots of manganese, vitamin C and fiber.
And of course, there is CHOCOLATE.
I really like chocolate. And raspberries. and chocolate covered raspberries. Of course, like good little boys, Seth and Cameron do too. So here is the recipe. I was inspired by this recipe from Sally’s Baking Addiction and the back of my Ancient Harvest Quinoa Flakes box. If you don’t need a allergy friendly recipe go check out Sally’s recipe, it looks pretty yummy!
These would be an easy breakfast on Valentine’s day with a smoothie. Or super yummy snack over the Valentine’s weekend. And yes, these are only allowed to be made Valentine’s day or Valentine’s weekend. They are way to addictive otherwise.
Raspberry Chocolate Chunk Muffins {Grain, Dairy, Refined Sugar and Nut Free}
Dry Ingredients:
1/2 cup quinoa flour
1/2 quinoa flakes
2 T arrowroot powder
1 t baking soda
1/2 salt
Wet Ingredients:
2 bananas – I have used really ripe, fresh bananas and frozen bananas. Both work well. If you use frozen let them thaw and then drain off some of the banana juice, there will probably be quite a bit.
2 T raw honey, softened
1/3 c water
Stir In:
1 cup frozen raspberries – I’m sure fresh would work just as well. Do NOT thaw the raspberries.
2 handfuls (precise isn’t it?) Enjoy Life Semi Sweet Chocolate Mega Chunks
- Preheat oven to 400*
- Spray muffin tin with cooking spray. I use an olive oil spray.
- In a large bowl whisk together dry ingredients.
- In a separate bowl mash banana. I use a pastry cutter to mash the banana, much easier than a fork!
- Stir water and honey into mashed banana.
- Dump your banana, water and honey into the large bowl of dry ingredients. Stir together until dry ingredients are moist.
- Quickly fold in raspberries and chocolate chunks.
- Fill muffin tins all the way to the top.
- Bake for 20ish minutes. The toothpick test doesn’t really work on these because of all of the yummy raspberries and chocolate chunks. I baked them until the top was firm when I pressed on them lightly.
- This recipe only makes six. This ensures that you do not gain weight over the Valentine’s day weekend.

If you can’t find it in a grocery store I know you can get it on Amazon. Quinoa flour does have a nuttier taste just so you know in advance. 🙂

Everything with bananas should always good for me as I have been a banana lover since a was a child. When I don’t have anything to eat or when I didn’t like any menu in a party, I will go straightly to banana.
