Last week we talked about different grain free flour options and I told you that I had a really yummy pancake recipe for you. A recipe that only uses ONE flour. This is a big deal to me, because for all the years that I have been baking gluten free {Remember: gluten free and grain free are different. There are many gluten free grains including rice, millet and oatmeal. Grain free means that you are using seed, nut and bean flours.} recipes usually require you to use many different flours to attempt to make a crumb or texture similar to gluten containing treats.

Just like gluten and other grain containing pancakes, if you want a thinner flatter pancake add more liquids. If you want a thicker and fluffier pancake stick with the lower amount of liquid. Before we get to the recipe we need to talk about grain free baking powder. Did you know that baking powder contains cornstarch? I sure didn’t until I started researching grain free diets and recipes. There are lots of recipes for grain free baking powder out there. Some use only baking soda and cream of tartar. Some have a starch added. I choose one that had a starch added so that I could replace it using the same measurements that a recipe might call for. {Check out how to make your own grain free baking powder here}

Gluten Free Buckwheat Pancakes {Grain free, Sugar free, Dairy free, Egg free, and Nut Free}
2 cups buckwheat flour
1 teaspoon salt
4 teaspoons grain free baking powder
1/2 teaspoon xanthan gum
1 3/4 – 2 1/4 cup water
1/4 cup avocado oil
Whisk the dry ingredients together. Make a well in the middle of the dry ingredients and pour in both the water and the oil. {You may want to start with the lower amount and then add more until you like the batter thickness.} Whisk until well combined and then cook over medium heat in a greased cast iron skillet.
If you use sprouted buckwheat flour in this recipe this would fit into the E category of Trim Healthy Mama meals.

Update on our grain free journey: This first week has gone pretty well, the first day Seth was asking for some things that he couldn’t have and was disappointed when I told him no, but ever since then he has taken it pretty well and asks before he eats things if he can have them. We did have a slip up at a family gathering last weekend, but I think that has been the only one. I’ve been trying to stay with him around mealtimes if we are visiting to make sure that he only gets things that he is allowed. This meal plan has worked well, and I don’t think anyone has felt too deprived of anything. I am spending much more time in the kitchen as pretty much everything has to be homemade. I like cooking so that hasn’t been to big of a deal, except for the state of the rest of the house…like the laundry piling up on the couch, but at least it is all clean. 🙂

If you aren’t gluten free, you may think they have a different flavor. They do, it is just that buckwheat flour has a different flavor than white and wheat.

This looks so good. I’m glad you told the difference between grain free and gluten free. I had never heard of grain free. This is great for those who have huge allergies!

Many people now are having issues with all different grains. This is largely because of our SAD western diet, lack of cultured foods and the GMO’s that are in everything we eat. Africa, Europe and Canada are banning GMO’s and I wish the US would get on the bandwagon as well.
Because of the poor diet here in the US many people have leaky gut syndrome and lots of food intolerances, grain being a big one, but also dairy, eggs and soy.

I actually just learned this a couple of months ago. I have also heard gelatin is a good substitute but I haven’t tried that yet.
